Chocolate Crumb Crust
A chocolate crumb crust is the perfect vehicle for homemade pumpkin pie and more.
Ingredients
1 package (7 ounces) Nabisco-brand Famous Chocolate Wafers, broken into several pieces
1/4 cup granulated sugar
3 ounces sweet (unsalted) butter, melted and slightly cooled
Preheat the oven to 450 degrees F. with the rack in the center position. Butter or use non-stick vegetable spray to coat a nine-inch pie plate. Pulverize the cookies in a food processor fitted with the metal blade or place them in a freezer strength plastic bag and crush by rolling over with a heavy rolling pin, or gently banging them with the bottom of a saucepan until the mixture is fine crumbs.
In a medium sized mixing bowl combine the crumbs, sugar and butter. Use a fork to toss the mixture to combine the ingredients. Scrape the mixture into the prepared pie plate and use your fingers to press the crumbs evenly into the bottom and up the sides. Don’t worry about making the sides perfectly even.
Bake the crust for 5 minutes, and cool to room temperature before using.
